VIRGINIA STATE FAIR BARBECUED CHICKEN

"This recipe was made famous at our Virginia State Fair, where every year Virginia Tech Agriculture Science students sell barbecued chicken dinners. The smell of this wonderful dish cannot be ignored as it wafts through the fairgrounds. It is undoubtedly everyone's favorite concession food!"

1/2 cup vegetable oil
1 cup apple cider vinegar
1/2 cup water
2 tablespoons salt
2 tablespoons pepper
5 teaspoons poultry seasoning
2 1/2 teaspoons garlic powder
3 (2 to 2 1/2 pounds each) chickens, cut into halves
3 tablespoons Tabasco sauce

Preheat the grill.

Mix the oil, vinegar, water, salt, pepper, poultry seasoning and garlic powder in a bowl. Brush over the chicken and place breast side down on a grill rack.

Grill over low heat for 1 1/2 to 2 hours, basting with some of the remaining sauce every 5 to 7 minutes and turning only once. Grill for 30 minutes longer or to 165 degrees F on a meat thermometer, basting with a mixture of the Tabasco sauce and the remaining sauce.

Makes 4 to 6 servings
